either nainital and corbett park
or shimla,manali

For travelling in May I think Himachal pradesh is the best option as weather is very smooth and lovely .Main destinations are kullu, manali, dharamshala, dalhousie , khajjiar .

In fact, all the places you have selected are good to travel on the months you mentioned.
With Nainital-Corbett, you can add Ranikhet or kausani.
If you opting for Simla, try to stay at Fagu, about 22 km from SImla. Simla is a very congested place.
Ladakh is a very nice place provided you are comfortable with heights. The Khardung la Pass (about 18400 feet amsl) is the highest motorable road in the world.Pangong Lake (about 14500 feet amsl) is the highest salty water lake in the world.
If you are adventurous and comfortable with heights, Ladakh and Leh would be a memorable journey, Go ahead ....
