In Australia, most of the banks convert foreign currency. Major credit cards like Visa, MasterCard, Amex and Diners Card are accepted. Most stores in Sydney accept VISA/Mastercard credit cards so it is not always required to carry cash everywhere. You would also find ATMs in most areas of Sydney.
There are Currency Exchange booths near the Opera House, George Street and the airport. However, if you exchange it at the airport, you would get charged nearly 15% over the best rate. Banks offer the best rates but they are only open on weekdays.
