1. Gahat Ke Parathe

This dish is a delicacy in Garhwal region of Uttarakhand. The paratha is prepared by stuffing Gahat Dal(a special brown lentil) in the wheat and mandua flour (Finger Millet/Ragi). This dish is very filling and makes an excellent breakfast option.

2. Bhang Ki Chutney

Bhang ki chutney is a very famous Kumauni dish specialty made with bhang seeds. It has a sour taste. This chutney is prepared with roasted Bhang seeds or hemp seeds and cumin seeds, sauf mixed with lemon juice. It is served as an accompaniment to other dishes.

This dish is a traditional dish from Uttaranchal. This gravy dish is cooked with potatoes using ghee & tempered with methi seeds.

Kafuli is a thick gravy preparation made from green leafy vegetables. Kafuli made of Spinach leaves is the most common preparation.

5. Phaanu

Phaanu is made of lentils but the pulses need to be soaked in water 4-5 hours before the preparation of the dish. The dish is not just made of one dal. The use of different dals like arhar, moong, urad are what give a unique taste to this dish.

6. Baadi

This dish comes right from the kitchen of Uttarakhand. This simple dish is made from Kwadaka Aata which is also commonly known as Choon or Mandua flour which is black in color. It is  best eaten with Gahat ki dal or Phaanu.

Chainsoo is a traditional pahadi side dish made using ground kali dal with a strong taste of coriander and garlic. This dish is prepared from black gram dal but it can also be prepared from black soya bean which is called bhattwani.

This is different! Mustard Raita or Kumaoni Raita is very famous authentic dish of Kumaun which is located in Uttarakhand. You could just try this raita with about everything in the Kumaoni cuisine. Prepared from curd, turmeric, grated cucumber, green chillies and the mustard seeds, this side dish is sure to make you drool!

9. Dubuk

This is a kumaoni recipe made of either Bhat ki Dal, Gahat ki Dal or Arhar ki Dal, which is converted into a fine paste and then cooked in an iron kadhai over slow fire. Dubuk is best relished with plain rice. Winters are the best time to try the dish.

10. Arsa

If you have a sweet tooth, you will surely love this dish. Roat and Arsa are two famous dishes of the Garhwali cuisine prepared during festivals and marriages. This is a different sweet made of jaggery and curd. Arsa are small sweet balls that melt in the mouth.

11. Bal Mithai

This brown chocolate-like fudge, made with roasted khoya, coated with white sugar balls is a popular sweet from Uttarakhand.
